To make the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Making the Cordial: Place all the ingredients into a pan, bring to a simmer, agitating until the sugar dissolves. Then, remove from the stove allowing it to cool down fully. Pour into a sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for about one month.
Preparing the Premix: Mix every liquids in a sizeable container, allow it to infuse for 60 minutes, then strain , ideally through cheesecloth, making it fully clarified.
To serve: Add 85ml from the cocktail base into a mixing glass packed with ice, and agitate carefully for a minute to cool it down. Strain to a frosted cocktail glass or similar, top with the cranberries and finish using a brief mist of the essential oil over the drink.
